Overview

Frozen carrot dice is the highest-volume frozen vegetable line Ukraine produces after sweet corn, and it is the one where buyers most often assume the specification writes itself. It does not. Ukraine grows processing carrot across Kherson, Mykolaiv, Cherkasy and Vinnytsia oblasts on light soils that suit mechanical lifting, and the IQF lines that serve those growing areas were built for a cheap, dense, high-throughput crop where margin lives in the peeling yield and quality lives in the blanch.

The product divides on three axes. Cut geometry is the obvious one. Variety group is the one that decides colour, sugar and how the cube behaves in a long simmer. And blanch adequacy is the invisible one — the parameter nobody can see at intake and everybody notices six months later when the product tastes of cardboard.

Grades, cuts and calibration

Cut. The industrial ladder is 10 mm and 15 mm dice, with 6 mm dice for baby food and fine soup bases, plus slices, batons and crinkle cuts for specific channels. Dice is specified on nominal edge length with a tolerance band and a maximum fines fraction, verified by sieve separation on a weighed sample. Fines are the part of the specification buyers forget until a customer complains that the soup is cloudy.

Colour. Carotene content drives the orange, and it varies by variety, by maturity and by growing season. Colour is specified either by visual reference panel or instrumentally, and it is worth doing instrumentally on any programme that runs across more than one crop year. Pale dice from an immature or over-watered crop is not a safety issue but it will fail a retail specification.

Core. The vascular core of a carrot is paler, more fibrous and tougher than the surrounding cortex. Processing varieties are selected for a small core relative to root diameter, and the specification usually caps the proportion of dice showing visible core. This is a real quality parameter with a real cost, because removing cored material means an extra sort.

Defects. Green shoulder from light exposure in the field, black rot and cavity spot lesions, mechanical bruising from lifting, and residual peel. Optical sorting after dicing removes most of these; the specification states a maximum percentage by weight for each category using the buyer’s defect classification.

Seasonality and availability

Ukrainian processing carrot is lifted from August through November. Harvest timing matters because carrot lifted early is sweeter and lower in dry matter, while late-lifted roots carry more solids and hold their shape better through cooking. A soup manufacturer and a baby food manufacturer will therefore want different points in the same season.

The freezing campaign runs alongside the lift and then continues into the winter from cold store, because carrot is one of the few vegetables that stores well as a raw root. Roots held in refrigerated bulk store are processed through to spring, which is how Ukrainian lines keep a frozen carrot programme supplied year round from a three-month field window. Store carrot is not identical to field-fresh carrot — it loses a little sweetness and picks up a slightly earthier note — and a buyer running a tight sensory specification should ask which they are getting. The crop year belongs on the certificate of analysis.

What the buyer checks at intake

  • Cube dimension and tolerance, verified by sieve separation on a weighed sample rather than by eye
  • Fines and undersize fraction as a percentage by weight
  • Colour against the agreed reference, ideally instrumentally on a programme spanning crop years
  • Residual peroxidase activity as the blanch adequacy check
  • Drip loss after a controlled thaw, which reveals how fast the product was actually frozen
  • Visible core, green shoulder and mechanical damage against the contracted defect limits
  • Product temperature at the tail lift and a continuous temperature record for the transit

Where it is used

Soups and sauces. The largest single outlet. Carrot dice goes into wet soup, dry soup mix rehydration blends, stocks and sauce bases where it contributes colour, sweetness and body. Buyers in this channel care most about colour consistency and cube integrity after a long cook.

Ready meals and food service. Frozen dice is portioned straight into trays and pans without a preparation step, which is the entire commercial argument for buying it frozen rather than fresh. Cube uniformity matters here because a mixed cube size cooks unevenly on a plated dish.

Baby food. Carrot is a foundational ingredient in infant purée and cereal blends. This channel applies separate and stricter contaminant expectations for products intended for infants and young children, requires field-level traceability and an agreed residue programme, and generally specifies the 6 mm cut.

Vegetable mixes. Carrot is in almost every vegetable mix sold in Europe, from a simple two-component pea and carrot through to seven-component soup vegetables. Mix formulation is covered in the soup mix sourcing guide.

Standards and routes

Frozen carrot moves out of Ukraine in reefer trailers on the western road corridors for European destinations and in reefer containers where the destination is overseas. The cargo is dense and weight-limits before it fills the trailer, so plan the load on payload rather than pallet spaces.

The controlling references are Codex CXC 8-1976 for handling quick frozen foods and the ATP agreement for the equipment. A continuous temperature record for the whole transit is standard on any programme; a spot reading at the tail lift proves only that the last hour was acceptable. For the practical detail of running this cold chain, see the cold chain management guide.

Applications

Suitable for a wide range of food and beverage applications.
