Particle Size

Letter

Particle size definition: the measured dimensions of pieces or powder particles in a food product, expressed as mesh size, cut size or sieve fraction, which affects dosing accuracy, dissolution, appearance and suitability for further processing.

In trade practice

For dehydrated powders such as garlic or onion, particle size is tested by sieve analysis using a defined mesh series, and results are expressed as the percentage passing or retained at each sieve. For cut dried fruit or frozen vegetables, piece dimensions are measured against a stated target with permitted tolerances. Buyers specify particle size in technical data sheets, and suppliers include sieve analysis results on certificates of analysis. Inconsistent milling or sieving calibration is a common source of non-conformance.

In a specification

A specification states the target particle size or mesh range, the percentage of product permitted outside that range and the sieve standard or test method to be applied.
