Overview

Linden honey – Tilia, lime blossom – is the aromatic monofloral of the region. It is pale amber, often with a faint green cast, and its defining feature is an aroma that reads as fresh, camphorous or minty, sometimes with a herbal bitterness in the finish. That aroma is the grade: a linden lot that is compositionally impeccable but aromatically flat is a commercial disappointment, and no laboratory line captures it, which is why sensory assessment against a retained reference belongs in the specification and not in the covering email. The second thing to know about the crop is that lime trees produce honeydew as well as nectar in some seasons, and aphid honeydew raises conductivity and darkens the honey. A linden lot therefore sits on a spectrum between a pure nectar honey and a nectar-honeydew mixture, and the contract should say which end of that spectrum it is buying.

Grades, cuts and calibration

The primary grading axes are aroma intensity, colour and conductivity. Aroma is assessed by trained tasting against a reference and is usually scored on a simple internal scale rather than on a published one. Colour is typically light to medium amber, in the 20 to 50 mm Pfund region for a nectar-dominated lot, with the green cast visible in a thin layer against white. Conductivity is the diagnostic for honeydew content: a nectar-dominated linden usually sits in the 0.4 to 0.7 mS per cm range, and a result at or above 0.8 mS per cm means a substantial honeydew share, which changes both the taste and the applicable composition rules, because the directive treats honeydew honey and blends of honeydew with blossom honey separately. Crystallisation is medium: faster than acacia, slower than sunflower, usually producing a fine to medium crystal over several months. Pollen analysis on Tilia is workable but not decisive on its own, since lime pollen can be over-represented relative to the nectar contribution, so the spectrum is read with conductivity and sensory assessment.

Seasonality and availability

The lime flow runs from the last days of June into July, and it is short and weather-sensitive: nectar secretion in Tilia drops sharply in dry heat and can stop for the season if the flowering period coincides with a heat wave. Urban and roadside limes flower earlier than forest stands, so beekeepers with mobile operations can extend the window by moving hives north or into shaded valleys. Extraction is in mid summer. Because the aroma is the value and aroma volatiles are heat-sensitive, the handling discipline on this crop matters more than on most: any warming to speed filtration costs part of what the buyer is paying for.

What the buyer checks at intake

  • Sensory assessment against a retained reference sample, scored and recorded, before any laboratory result is considered.
  • Electrical conductivity, to establish where the lot sits between nectar honey and a honeydew blend, and to check that against the contract description.
  • Colour on a liquid sample at 20 degrees Celsius, with the green cast checked in a thin layer.
  • Moisture per drum by refractometer. Do not accept a single composite figure for a container.
  • HMF and diastase against the extraction date. On an aromatic honey, high HMF usually means the aroma has already been damaged.
  • Physical state and crystal texture, and whether the lot has partially set in a way the packing line cannot handle.
  • Residue and authenticity file: antibiotic screen, varroa treatment residues, stable carbon isotope result and, where required, an NMR profile.

Where it is used

Retail private label is the main outlet, in glass, and the aroma is the reason the consumer repeats the purchase. The pharmacy and herbal channel uses linden honey in throat and cold preparations and in honey and herb blends, on the strength of the traditional association with lime flower infusions; the same claim rules apply as for any honey. Beverage and hospitality use covers teas and cocktails, where the menthol-fresh top note survives dilution better than the delicate acacia profile does. Industrial and bakery use is smaller, because heat destroys the aroma that carries the price premium; a buyer who intends to bake the honey should be buying a cheaper grade and saying so.

Standards and routes

Ambient dry container or road trailer, presented at a border control post with the animal-origin documentation set: health certificate on the Commission model, listed establishment, CHED in TRACES NT, residue monitoring plan in place at origin. Because aroma is the value on this crop, avoid long standing time in a sun-exposed container and specify a maximum in-transit temperature even though no cold chain is legally required.

  • Honeydew shifts the rules

    Conductivity at or above 0.8 mS per cm means a honeydew share, and different composition criteria apply.

  • Heat is the enemy

    Warming to speed filtration removes the volatiles the premium is paid for. Ask how the lot was processed.

  • Short, weather-bound flow

    Dry heat during flowering can end the lime flow for the season. Volume risk is real.

What makes linden honey taste minty?

Volatile aroma compounds from lime nectar, which read to most tasters as menthol, camphor or fresh mint, sometimes with a herbal bitterness in the finish. They are volatile, which is the commercially important part: they are lost to heat and, more slowly, to long warm storage. A linden lot that has been heated to ease filtration can be fully compliant on every laboratory line and still be worth less, which is why the specification needs a sensory clause with a named reference.

My linden lot reads 0.85 mS per cm on conductivity. Is it non-compliant?

It is a signal that the lot carries a significant honeydew share rather than being a pure nectar honey. Directive 2001/110/EC sets its conductivity criteria differently for blossom honey and for honeydew honey and blends, with named exceptions, so the answer depends on how the article is described and on the national transposition that applies at the point of sale. Practically: raise it with the supplier, re-read the description on the contract, and check the taste, because honeydew content changes the profile as well as the number.

Can linden honey be sold as a cold remedy?

No. Honey may not carry an unauthorised health claim in the Union, and no honey-specific health claim is authorised at the review date. The traditional association with lime flower infusions is a cultural fact, not a claim basis. Category positioning, botanical origin and sensory description are all permitted; a statement that the product treats or relieves a condition is not.

How fast will it crystallise on shelf?

Typically a fine to medium set over three to six months at ambient temperature, faster if the store is cool and slower if it is warm. That is between acacia, which stays liquid for a year or more, and sunflower, which sets in weeks. If a liquid appearance has to hold across a retail shelf life, either specify a creamed product or set a realistic best-before window with the customer rather than relying on the honey to behave.
