Blanching is a short heat treatment, in hot water or steam, applied to vegetables and some fruits before freezing. It inactivates enzymes such as peroxidase that would otherwise cause loss of colour, flavour and vitamins during frozen storage. Blanching is always followed by rapid cooling so the product enters the freezer at low temperature.
