Block-frozen product is frozen together into a solid slab rather than piece by piece. It is cheaper to produce than IQF but pieces cannot be separated without thawing, so block-frozen fruit is mainly used by juice, puree and jam producers who reprocess the raw material. For portioning and retail packing, buyers specify IQF instead.
