Crust freezing describes a situation in which the outer layer of a product freezes much faster than its core, typically because of very low air temperature or overloaded tunnels. The resulting temperature gradient can produce uneven crystal structure and internal moisture migration, so industrial freezers balance air temperature, velocity and belt loading.
