Cryogenic freezing uses liquefied gases such as liquid nitrogen or carbon dioxide at extremely low temperatures to freeze product within seconds. The very high freezing rate produces tiny ice crystals and excellent texture retention, but operating costs are high, so cryogenic freezing is reserved for premium, delicate or high-value products.
