Air-blast freezing is a method in which cold air, typically at −30 to −40 °C, is blown at high velocity over the product to freeze it rapidly. It is the most common industrial freezing technique for berries and sliced fruit and is the basis of IQF tunnels. Air velocity and temperature determine freezing speed and, consequently, ice crystal size and final texture.
