Slow freezing occurs when product temperature drops gradually, for example in an overloaded or underpowered cold store. Large ice crystals form, cell walls rupture, and after thawing the fruit becomes soft, leaks juice and loses shape. Slow-frozen berries are unsuitable for retail and food-manufacturing uses that require intact individual pieces.
