Recrystallisation is the growth of ice crystals during frozen storage caused by temperature fluctuations: small crystals melt and re-freeze onto larger ones. The process damages texture, increases drip loss and accelerates quality decline even though the product never fully thaws. A stable −18 °C cold chain is the only effective prevention.
