Plate freezing presses product between hollow metal plates through which refrigerant circulates. It freezes product into uniform blocks or bricks and is energy-efficient for items that will be further processed, such as spinach blocks or fruit blocks for puree production. It is not suitable where individual, free-flowing pieces are required.
