Overview

Air-dried raspberry is dried with heated air, which removes water as vapour from a liquid phase. The cell walls collapse as the water leaves, so the piece shrinks, darkens and ends up dense and chewy rather than crisp. That is not a defect, it is the format: air-dried fruit is bought for tea blends, cereals, bakery inclusions and anywhere a piece has to survive mixing and baking without shattering. It costs a fraction of what the freeze-dried format costs, and it behaves completely differently, so the two should never be quoted against each other as if they were alternatives.

Seasonality and availability

Raw material comes from the summer raspberry harvest, dried either directly or from frozen stock. Drying capacity is more available than freeze-drying capacity, so lead times are shorter and the product is easier to get at short notice. Quality varies with the drying schedule as much as with the fruit.

What the buyer checks at intake

  • Moisture content and water activity, with the temperature of the water activity reading recorded.
  • Sulphite status. Confirm whether the lot is sulphited and at what level, and check it against your label.
  • Colour, which darkens with drying temperature and with storage.
  • Texture by hand. Hard, glassy pieces indicate over-drying.
  • Caking and consolidation in the bag, especially after a warm transport leg.
  • Foreign matter and stalk content.

Ambient dry goods, no reefer required. Keep it away from humidity and heat in transit. Certification is normally BRCGS or IFS Food, with EU organic where relevant.

FAQ

Why is it so much darker than fresh fruit?

Heat and oxygen during drying drive browning reactions, and the loss of water concentrates the remaining pigments. A darker colour is normal for the format. If a pale product is needed, the freeze-dried format or a sulphited product is the route, and the second has labelling consequences.

Does it contain sulphites?

It depends on the lot and it must be declared. Sulphur dioxide and sulphites have to appear as an allergen on the finished product when present above the threshold set in the food information rules. Ask for the figure and the method, per batch.

Can it be rehydrated?

Yes, but it will not return to fresh fruit. Expect a softened piece with a cooked character. If rehydration performance matters, agree a test method and a target rather than relying on a supplier’s description.
