Tunnel freezing is an industrial method in which product moves on a belt or trays through an insulated tunnel while refrigerated air at −30 to −40 °C is circulated by fans. Tunnels can operate batch-wise or continuously and are the standard equipment behind IQF lines for berries, sliced fruit and vegetables.
