Ice crystal size is a key determinant of frozen food quality. Fast freezing creates many small crystals that do little damage to cell walls, while slow freezing produces large crystals that rupture cells, causing soft texture and high drip loss after thawing. Temperature fluctuations in storage make crystals grow further through recrystallisation.
