Glazing is the application of a thin layer of ice, by spraying or dipping water onto frozen product, which acts as a protective coat against dehydration and oxidation during storage. The glaze percentage must be declared, and net weight labelling in the EU excludes the glaze. Typical glazing levels for fruit and vegetables range roughly from 10 to 20 percent.
