Freezing rate describes how quickly the product temperature falls through the zone of maximum ice crystallisation. Faster freezing produces smaller ice crystals, less cell damage and better texture after thawing. This is why IQF at −30 to −40 °C is preferred for whole berries, while slow freezing is associated with mushy texture and high drip loss.
