Freezer burn is the dehydration of the surface of frozen product caused by sublimation of ice when packaging is damaged, incomplete or permeable, or when temperature fluctuates. Affected areas look dry, white or brownish and develop off-flavours. Proper packaging, glazing and a stable −18 °C cold chain prevent it.
