Deep Freezing

Letter

Deep freezing is the process and storage state in which a food product’s core temperature is brought to and maintained at or below the threshold required by quick-frozen food regulations, ensuring microbial stability and quality preservation throughout the supply chain.

In trade practice

EU rules on quick-frozen foodstuffs set the storage and transport temperature requirement that operators must meet; temperature monitoring equipment in cold stores and refrigerated vehicles must be calibrated and records kept available for inspection. Logistics teams should check that temperature loggers accompany each shipment and that data is reviewed on arrival. A common mistake is confusing the freezing process temperature with the storage holding temperature, which can lead to non-compliant storage conditions.

In a specification

Purchase contracts and logistics agreements should reference the applicable EU quick-frozen foodstuffs regulation and state that the product must be maintained at or below the required core temperature from despatch to delivery.
