Block-Frozen Product

Letter

Block-frozen product is food frozen as a solid, undivided slab rather than as individual pieces, making it suitable for industrial reprocessing but not for retail portioning or direct use without thawing.

In trade practice

Juice, puree and jam manufacturers typically specify block-frozen fruit because they melt the entire block in a processing vessel, making piece separation irrelevant. Buyers should confirm the intended end use before ordering, as block-frozen material cannot be portioned or weighed without full thawing. Suppliers document the block weight and dimensions on the packing list, and logistics teams must ensure storage temperatures remain stable to prevent partial thaw and refreezing within the block.

In a specification

A purchase contract for block-frozen product should state block weight tolerance, packaging format and the maximum allowable core temperature at point of delivery.
