Two risks dominate the nut and seed trade and they pull in opposite directions. Aflatoxin is a food safety risk concentrated in a handful of kernels per tonne, which makes it a sampling problem before it is an analytical one. Oxidative rancidity is a quality risk distributed evenly through the lot, which makes it a storage and packaging problem. A control programme that handles one well and the other badly is the normal condition in this category.

Everything else follows from those two: why the sampling regulation is written in such detail, why sorting technology carries the cost it does, why a walnut specification is written around colour and stability while an almond specification is written around size and treatment status.

The product records

Raw walnut kernel is the anchor product and a genuine Ukrainian crop. Raw almond and raw cashew are the two imported kernels that complete an industrial nut programme, each with its own grading system and its own supply concentration. On the seed side, hulled pumpkin seed and brown flaxseed are Ukrainian products with established export lines, and chia seed is an authorised novel food sourced from Latin American origins.

Which of these products are genuinely Ukrainian?

Walnut kernel, hulled pumpkin seed and brown flaxseed are real Ukrainian crops with domestic processing capacity. Cashew, almond and chia are not grown in Ukraine and any offer presenting them as Ukrainian origin is presenting re-exported material. Each product record states the actual origin base in its opening paragraph, because getting this wrong at the offer stage causes problems at the certificate of origin stage.

What is the single most common gap in a nut specification?

No stated position on which regulatory line the aflatoxin limit comes from, meaning material for direct consumption or material to be sorted before consumption. The second most common is a defect percentage with no physical or photographic reference against which defective is judged, which makes the clause unenforceable at the point it is needed.

How should shelf life be written for a kernel or a seed?

With the storage temperature, the pack format including any headspace treatment, and the water activity at packing. A shelf life figure on its own describes nothing, because oxidation rate and moisture uptake both depend on conditions the figure does not state. For high-polyunsaturated kernels, require a peroxide value at shipment rather than only at packing.
