Baker’s honey is the EU legal designation for honey that does not fully meet the table-honey composition criteria, for example because of higher HMF from heating, and is intended for use as an ingredient in cooked or baked foods. Labels must state ‘intended for cooking only’, and bulk documents must identify it as baker’s honey.
