The diastase number measures the activity of the enzyme diastase (amylase) in honey, expressed on the Schade scale. The Codex honey standard requires a minimum of 8 in general, with lower values accepted for honeys that are naturally low in enzymes. Because enzymes are destroyed by excessive heat, the diastase number is used together with HMF to verify that honey has not been overheated during processing.
