Crystallization is the natural process by which glucose in honey forms crystals, turning liquid honey solid or semi-solid. It is not a defect. Speed depends mainly on the glucose-to-water ratio, temperature and presence of seed crystals; rapeseed honey crystallises within weeks while acacia can remain liquid for years.
