Overview

Frozen sweet corn is a commodity with one genuinely technical variable behind it: the time between cutting the cob in the field and freezing the kernel. Sweet corn starts converting sugar to starch as soon as it is harvested, and the conversion is fast at field temperature. A plant located next to its fields and running through the night can freeze kernels that taste sweet. A plant that trucks cobs for hours in the sun cannot, no matter what the specification says. The kernels look identical either way, which is why the useful question to a supplier is how long their field to freezer window is and how they control it during the peak.

Seasonality and availability

Harvest runs from July into September. Sweet corn is a high volume, short window crop and the plants run continuously through it. Product is drawn from cold store through the rest of the year. Prices are usually keenest just after the harvest and firm as stocks deplete, and the sweetest material is generally the fruit of a well organised peak rather than of any particular week.

What the buyer checks at intake

  • Kernel size and uniformity on a sieved sample.
  • Colour, which should be even. Pale or off-white kernels indicate maturity or variety issues.
  • Core temperature at minus eighteen degrees Celsius or colder.
  • Cob fragments, husk and silk against the agreed tolerance.
  • Free-flowing behaviour and clumping.
  • Taste on a cooked sample. It is the only practical check for the sugar to starch question.

FAQ

Why does one lot taste sweeter than another?

Variety and, more often, the time between harvest and freezing. Sugar converts to starch quickly at field temperature. Two lots with identical specifications can taste different for this reason alone.

Is supersweet variety worth paying for?

If the corn is eaten as a visible ingredient, usually yes. If it disappears into a mixed vegetable blend or a soup, the difference is much harder to detect and the premium is harder to justify.
