Mushroom Grading and Moisture Control: Reading a Dried and Frozen Specification

How the grading systems actually work across porcini, chanterelle, shiitake and champignon, and why moisture and water activity decide whether a lot survives storage

Basic familiarity with a food specification. No mycology assumed

There is no international commodity standard for dried mushrooms in the way there is for dried oregano or for milling wheat. What exists instead is a set of trade conventions that differ by species, by origin and, uncomfortably often, by supplier. A grade letter on an offer sheet is a claim about appearance made by the party selling the goods. It becomes a contractual term only when the contract also carries the written description behind the letter and a retained reference sample to check it against.

This guide sets out what the conventions actually describe, and then deals with the parameter that causes more rejections than all the grading disputes combined: moisture, and the water activity figure that should always sit beside it.

Grading is species-specific

The four commercial lines in this category are graded on completely different axes, and a buyer who imports one specification into another category will get it wrong.

Two general rules survive the species differences.

A letter is not a specification. Porcini grade A is a description – pale cream to light tan flesh, intact light tube layer, no dark discolouration, high whole-slice share – and the description is what a laboratory or an intake team can act on. Write it out.

Every defect needs a number. “Free from sand”, “minimal insect damage” and “substantially whole” are all unenforceable. A percentage maximum by weight, with the test method stated, is enforceable. The phrase most worth removing from a mushroom specification is “free from”.

Moisture and water activity are different questions

Moisture tells you how much water is in the product. Water activity tells you how much of that water is available to microorganisms. A lot can be compliant on one and not on the other, and the one that predicts spoilage is water activity.

The distinction matters because dried mushrooms are heterogeneous. A batch containing thick stem pieces and thin cap slices dried in the same tunnel will reach the target average moisture with the slices over-dried and the stem pieces still wet inside. The composite sample passes. The wet fraction supports mould growth and, given a warm store, spoils the lot from the inside.

That is what conditioning after drying exists to prevent: holding the material long enough for moisture to equalise between fractions before it is graded and packed. A supplier who does not condition is shipping an average rather than a product.

Three things belong in every moisture clause.

  1. The method. Oven loss on drying at a stated temperature and time, or Karl Fischer where the contract names it. The two do not give the same number on the same sample.
  2. The water activity limit, determined to ISO 21807. Trade practice for dried mushrooms is a maximum around 0.60, which sits below the growth threshold for the moulds that matter, but the contract figure should be agreed rather than assumed.
  3. The point of measurement. Dried mushrooms are hygroscopic. Both figures should be checked on arrival as well as at packing, because a breached liner or a sweating container will move them.

The frozen line is a different discipline

For IQF product, moisture is not the control point. Three others are.

Blanch adequacy. Polyphenol oxidase in mushroom flesh browns the tissue, and freezing slows the reaction without stopping it. A blanch that is validated to inactivate the enzyme – not merely applied – is what keeps the product pale. Ask how the validation is done, not whether a blanch exists.

Freeze rate and free flow. Individual quick freezing keeps the pieces separate. A slow freeze bonds them. But most clumping observed at intake is not a production defect at all: it is the signature of a thaw and refreeze in transit, and it is distinguishable by the loose ice crystals and the ice sheet against the film that accompany it.

Cold chain evidence. Which is why the temperature logger record is part of the quality documentation and not a logistics afterthought. Council Directive 89/108/EEC addresses the temperature regime for quick-frozen foodstuffs intended for the final consumer, and the Codex code of practice for the processing and handling of quick frozen foods gives the corresponding practice guidance. Neither writes your excursion tolerance for you; the contract has to.

Contaminants and the wild-origin file

Two regulatory questions attach to this category and both are origin-dependent.

Radioactivity. Commission Implementing Regulation (EU) 2020/1158 sets maximum permitted levels of caesium-137 for products imported from a list of third countries affected by the Chernobyl accident, Ukraine among them, and wild mushrooms are one of the named categories. An official certificate accompanies the consignment and checks are carried out at the border control post. Commission Implementing Regulation (EU) 2024/256 extended the scope to processed products and mixtures containing wild mushrooms, with the level calculated on the reconstituted product, which catches soup mixes and seasoning blends. Cultivated species grown on a prepared substrate are outside the regime.

Novel food. Regulation (EU) 2015/2283 sets 15 May 1997 as the cut-off for significant consumption in the Union. Whole and sliced fruiting bodies of long-consumed species are not novel. Mycelium produced by fermentation, extracts and concentrated fractions can be, and the burden of demonstrating otherwise sits with the operator placing the product on the market. Whether wild mushrooms are a novel food covers the mechanism.

Beyond those, the general contaminants regulation applies to lead and cadmium at the relevant commodity line, and mushrooms are accumulators of some metals, so this is not a formality. Consult the consolidated text rather than a number quoted on a specification sheet.

Intake checks that earn their keep

Six checks catch most of what goes wrong, and none of them needs a laboratory beyond a balance and a drying oven.

  • Moisture and water activity on the arriving lot, sampled from several positions in the pallet rather than from the top carton.
  • Grade verification on a weighed sub-sample against the retained reference, expressed as a percentage rather than as an impression.
  • Fines and broken share after sieving. A high fragment share is a silent price change, because pieces sell into a different application.
  • Sand by washing and weighing, mandatory on chanterelle and worth doing on porcini. Dried grit does not wash out at rehydration; it ends up in the dish.
  • Rehydration trial on a small sample, with the soak time and water temperature you actually use. This is the check that catches over-dried material, which passes every number and stays tough.
  • Document identity. Lot number on the certificate against the lot marking on the cartons. Certificates travelling with the wrong lot are more common than anyone admits.

What a workable specification looks like

Put the species and, for wild lots, the tolerance for related species, with any toxic species excluded at any level. Put the presentation and the cut with a numeric tolerance. Put the grade as a written description plus a retained reference sample, refreshed each season. Put moisture with its method, water activity with ISO 21807, and both required on arrival. Put every defect as a percentage maximum with a test method. Put the microbiological panel, separating the legal criteria under Regulation (EC) No 2073/2005 from the buyer’s own process hygiene levels. Put the packaging, including the liner specification, because that is what protects the moisture figure. Then put the documentation list, including the radioactivity certificate where the origin requires it.

That is a longer specification than most buyers in this category use, and it is shorter than the correspondence generated by a single rejected container.
