Sucrose

Letter

Sucrose is a disaccharide present in small amounts in ripe honey. The EU Honey Directive limits it to a maximum of 5 g per 100 g for most honeys, with specific higher allowances for certain botanical origins. Elevated sucrose can indicate unripe honey, feeding of bees with sugar, or adulteration.
