Honeydew honey is produced by bees from secretions of plant-sucking insects on trees, such as fir, pine and oak, rather than from flower nectar. It is darker, less sweet and richer in minerals, with electrical conductivity generally above 0.8 mS/cm, and under the EU directive its fructose-plus-glucose content must be at least 45 g per 100 g.
