Fructose is the dominant sugar in most honeys, typically around 38 percent. Together with glucose it must make up at least 60 g per 100 g in blossom honey under the EU Honey Directive. The fructose-to-glucose ratio influences crystallisation speed: higher fructose keeps honey liquid longer.
