Superchilling (deep chilling) stores fresh product slightly below its initial freezing point, typically between −1 and −4 °C, without fully freezing it. A fraction of the water crystallises, which extends shelf life beyond normal chilling. It is used mainly for fish and meat; for berries it is not a mainstream commercial practice.
