Chilled Storage

Chilled storage keeps product at temperatures above freezing, typically 0 to +4 °C, slowing but not stopping microbial growth and enzymatic activity. It is used for fresh produce, dairy and thawed-for-use ingredients. Chilled products have short shelf lives and require strict temperature discipline and stock rotation.
