Pre-Cooling

Letter

Pre-cooling is the rapid removal of field heat from freshly harvested produce, or the conditioning of storage and transport equipment to the required temperature before loading, to protect product quality and maintain cold-chain integrity from the outset.

In trade practice

For fresh produce, processors use forced-air, hydro-cooling or vacuum cooling immediately after harvest to bring core temperature down before packing. For frozen fruit and vegetables, the equivalent discipline is verifying that cold stores and reefer containers have reached the specified set-point before loading begins; loading warm product into a cold unit raises the ambient temperature and can cause partial thawing at the load surface. Suppliers are typically required to record pre-load equipment temperatures on the loading checklist, which forms part of the shipment documentation.

In a specification

Cold-chain transport contracts and loading instructions commonly require the reefer unit to be pre-cooled to the contracted set-point temperature and verified by a calibrated data logger reading before the loading doors are opened.
