Air freight is the transport of cargo by aircraft. It is the fastest but most expensive mode and is used in food trade mainly for samples, urgent spare stock or high-value, low-volume goods. For bulk frozen fruit and honey, sea and road transport dominate because air rates make the cargo uneconomical.
