How long do dried pulses keep?

Short answer

Dried pulses stored cool, dry and insect free remain safe and nutritious for years. That is not the useful answer, because what degrades first is cook behaviour, and it degrades on a timescale of months rather than years when storage is poor.

The two clocks

Safety and nutrition. Very slow. Protein and starch are stable; some vitamin content declines. A properly stored pulse does not become unsafe with age. What makes it unsafe is moisture ingress, which allows mould growth, or insect infestation.

Cook quality. Much faster. Pulses develop a hard-to-cook condition in which the seed hydrates progressively more slowly. The mechanism involves changes in the cell wall and in the seed’s pectin chemistry, and the rate rises sharply with temperature and humidity.

What actually controls the rate

A twelve-month-old lot from a cool dry store will routinely cook better than a six-month-old lot from a hot one. Age alone is a poor predictor.

Practical storage guidance

  • Store cool and dry, with the emphasis on cool.
  • Keep bags off the floor and away from external walls, where condensation forms.
  • Monitor for insect activity rather than assuming a clean intake stays clean.
  • Rotate stock genuinely first in, first out.
  • Do not store next to strongly aromatic goods. Pulses pick up taint, and taint is not reversible.

What to require from a supplier

Declare the harvest year on the certificate of analysis. Where cook behaviour matters, require a current cook test rather than accepting a harvest-time figure. Best-before dates

A best-before date on a retail pack is set by the operator placing the product on the market, on the basis of their own shelf life study and their own packaging. It is not a property of the raw material, and a supplier who quotes one for bulk product is quoting a convention rather than a tested figure.
