Kjeldahl Method

Letter

The Kjeldahl method determines protein content by digesting a sample with acid, distilling the released ammonia and titrating it, then converting nitrogen to protein using a product-specific factor. It is the reference method for protein declaration in most food specifications and nutrition labelling.
