Modified atmosphere packaging (MAP) replaces the air inside a pack with a defined gas mixture, typically adjusting oxygen, carbon dioxide and nitrogen, to slow oxidation and microbial growth. MAP extends shelf life of chilled products and some fresh produce; for frozen fruit it is rarely needed.
