Lyophilization, or freeze-drying, is a dehydration process in which frozen product is placed under vacuum so that ice sublimes directly into vapour without passing through the liquid phase. It preserves structure, colour and heat-sensitive nutrients better than any other drying method and yields a shelf-stable, easily rehydrated product.
