Core temperature is the temperature measured inside the product, at its thermal centre, rather than in the surrounding air. Quick-frozen food law sets limits on core temperature (−18 °C or colder, with brief upward fluctuations of no more than 3 °C permitted), because air temperature alone does not prove the product itself stayed frozen.
