Organic fruit generally trades above the conventional equivalent, but the differential is neither uniform nor free, and buyers who plan around a single assumed percentage tend to be disappointed in both directions.
Where the differential is widest
The premium tracks scarcity, not virtue. It is widest where organic production is agronomically hard and demand is concentrated: berries with high disease pressure, stone fruit in humid seasons, and any species where organic supply is thin relative to a specific destination’s demand. It narrows sharply in species where organic conversion has been easy and supply has caught up.
Form matters as much as species. Organic IQF whole fruit with retail-grade cosmetics carries a wider differential than organic puree or concentrate, because the puree route can absorb fruit that would fail a cosmetic grade and therefore has a deeper raw-material pool.
Destination matters too. Markets with mature organic retail channels sustain differentials that thinner markets do not, and within a single market the differential in industrial ingredient buying is consistently narrower than in retail packing.
What consumes the differential
Organic fruit yields less per hectare, which raises the cost base before any certificate is issued. Certification under Regulation (EU) 2018/848 carries annual inspection cost, and imports need a certificate of inspection issued in TRACES that matches the consignment. Segregation is the underestimated cost: an organic run through a shared line requires documented cleaning, separate storage and a traceability chain that survives an audit, and on a busy line that means lost production time.
The practical reading
Treat the premium as a range that is negotiated season by season rather than a fixed uplift, and verify the certificate and its scope before valuing it at all. An organic claim without a matching certificate of inspection is a conventional consignment.
