What is aseptic fruit puree?

Short answer

Aseptic puree is fruit that has been refined, sterilised in a continuous closed system and filled into a pre-sterilised multi-layer bag inside a drum or carton, under sterile conditions. The result is stable at ambient temperature for typically twelve to eighteen months.

The commercial case is entirely about the removed cold chain. No freezer storage, no reefer transport, no thawing step, no drip loss, no ATP equipment requirement. For a manufacturer who was going to heat the fruit anyway, that is a large saving in landed cost and in operational complexity.

The trade-offs are real. The heat step costs colour and aroma relative to frozen puree, and the format is inflexible once opened: a plant that opens a two-hundred-kilogram bag to draw forty kilograms has destroyed the economics in one movement. Pack size is a design decision, not a logistics detail.

The critical point for a buyer is that sterility is a process claim rather than a test result. No end-product test proves a batch is sterile, because sampling destroys the bag. What exists is a validation package: the thermal process validation, the steriliser and filler records, the aseptic zone integrity checks and the incubation testing regime. A supplier who responds to a request for that package with a sterility certificate has told you something important.

The most common failure mode is physical rather than microbiological. A pinhole in the bag from drum damage or pallet shift reintroduces organisms into a product with no other defence, which is why a dented drum is a quarantined drum until the bag has been checked.
