A sun-dried product is a food item dried outdoors using direct solar radiation and natural air movement, a traditional low-energy method used for apricots, grapes, plums and tomatoes in warm climates, where hygiene and moisture control are critical quality risks.
In trade practice
Because sun drying exposes product to dust, insects and variable weather, buyers assess the supplier’s hygiene controls, including drying surface materials, pest exclusion measures and rain-cover availability, before approving a source. Moisture content and water activity must be verified on the finished lot, as uneven drying can leave pockets of high moisture that promote mould. Where sulphur dioxide is applied to preserve colour, it must comply with the maximum levels in Regulation (EC) No 1333/2008 and be declared on the label. Country-of-origin and phytosanitary documentation are required for EU customs clearance.
In a specification
A specification for a sun-dried product states the drying method, moisture content or water activity limit, sulphite status, colour grade and maximum defect tolerance, and may require the supplier to confirm hygiene controls in a completed questionnaire.
