Organoleptic Analysis

Letter

Organoleptic analysis is the structured sensory evaluation of a product using sight, smell, taste and touch to assess colour, odour, flavour, texture and appearance against defined reference standards, and is a standard quality-control and lot-acceptance tool in food trade.

In trade practice

Trained assessors score samples against written specification descriptions or physical reference standards; results are recorded on a sensory evaluation form that becomes part of the lot documentation. For honey, organoleptic assessment is required under applicable EU honey legislation and covers colour, aroma and taste characteristics linked to floral origin. Dried herbs and spices are evaluated for off-odours that may indicate microbial spoilage, incorrect drying or cross-contamination, which instrumental tests alone may not detect. A common gap is using untrained staff for intake checks, which produces inconsistent results and weakens any subsequent dispute over non-conforming goods.

In a specification

A specification typically describes expected colour, odour and flavour in plain language and may reference a physical standard or approved sample held by both parties as the benchmark for acceptance.
