Honey Extraction

Letter

Honey extraction is the process of removing honey from the comb, almost always by centrifugal force in a honey extractor that leaves the wax comb intact for reuse, with hygiene and temperature control being critical to product quality.

In trade practice

Extraction rooms must be kept clean, pest-free and at a temperature that keeps honey fluid enough to flow without overheating it, which would degrade enzymes and darken colour. Frames are uncapped before spinning, and honey is strained to remove wax particles before settling tanks allow air bubbles to rise. Poor hygiene at this stage is a common route for yeast contamination that leads to fermentation, a defect detectable in moisture and yeast-count tests requested by EU buyers.

In a specification

Purchase specifications for export honey typically require that extraction be carried out in a registered or approved facility; some contracts reference compliance with national veterinary authority approval as a condition of supply.
