Mushroom Extract

Letter

Mushroom extract is a concentrated preparation obtained by hot-water or solvent extraction of mushroom solids, then spray-dried or retained as a liquid, used to standardise flavour and umami intensity in soups, sauces and savoury products.

In trade practice

Buyers specify solids content, moisture, and flavour strength in the purchase specification, and request a certificate of analysis confirming these parameters for each batch. Suppliers must declare the extraction solvent and any carrier agents used, as these affect labelling under EU food information rules. A common mistake is accepting a liquid extract without a confirmed solids-equivalent figure, making batch-to-batch flavour consistency impossible to verify.

In a specification

A contract specification typically states minimum soluble solids content, moisture on dry basis, and the mushroom species used, with the extraction method noted as a quality descriptor.
