Mushroom shelf life is the period during which mushrooms retain acceptable appearance, texture and safety for sale or use, and it varies substantially between fresh, frozen and dried formats depending on temperature, moisture and packaging conditions.
In trade practice
For fresh mushrooms, rapid cooling after harvest, storage near zero degrees Celsius and breathable packaging are standard practice to slow respiration and delay discolouration. Frozen mushrooms require unbroken cold chain maintenance and are typically assigned a best-before date based on validated stability studies. Dried mushrooms depend on water activity control; buyers check moisture content and packaging integrity on receipt to confirm that shelf life claims are supportable.
In a specification
A product specification states the minimum remaining shelf life required at point of delivery, the storage conditions under which the declared shelf life applies, and the method used to determine the best-before date.
