Mushroom Canning

Letter

Mushroom canning is a thermal preservation process in which blanched mushrooms are sealed in cans or jars with brine and heat-sterilised to achieve ambient shelf stability without refrigeration.

In trade practice

Processors blanch mushrooms before filling to reduce volume and remove surface microorganisms, then apply a validated retort process to achieve commercial sterility. QA checks cover drained weight, brine salt concentration, cap size distribution and texture after sterilisation. Buyers should verify that the retort schedule is documented and that seam integrity tests are performed on each production run. Mislabelled drained weight is a frequent non-conformance in canned mushroom trade.

In a specification

A contract specification for canned mushrooms typically states minimum drained weight per can size, brine salt concentration range, maximum broken or fragmented pieces as a percentage, and cap diameter class.
