Soup Mixes

Letter

Soup mixes are vegetable blends formulated for soup production, combining roots, brassicas, alliums and legumes in application-specific recipes to help food manufacturers standardise flavour and reduce preparation work.

In trade practice

Formulators balance cook-out times so all components reach the correct texture simultaneously, which often means cutting denser roots smaller than softer vegetables. Buyers issue a recipe specification listing each ingredient, its cut, percentage and acceptable substitutes when a component is out of season. Suppliers working across frozen and dried formats must align moisture content and rehydration ratios so the finished soup meets the target solids level. Allergen status of each component, particularly celery and legumes, must be declared on the product specification.

In a specification

A soup mix specification lists each vegetable component with its cut dimensions, target weight percentage and permitted variance, and states whether the mix is supplied frozen or dried.
