Titratable Acidity

Titratable acidity measures the total acid content of a product by titration with a base, expressed as percent of the dominant acid, such as citric acid in berries. Together with Brix it defines the sugar-acid balance and flavour profile, and it is a standard parameter for purees, juices and fruit ingredients.
