Freeze-dried product is obtained by freezing the raw material and removing ice by sublimation under vacuum (lyophilisation). The result is a porous, lightweight product with excellent retention of shape, colour, aroma and nutrients and residual moisture of about 2–5 percent. Freeze-dried berries are a premium ingredient for snacks, cereals and confectionery.
