Drum drying spreads liquid or pureed product as a thin film onto a heated rotating drum, from which the dried layer is scraped off as flakes or powder. It is energy-efficient for purees and starch-rich products but involves high surface temperatures, so it is chosen where flavour and colour tolerance allow.
