Sliced Fruit

Letter

Sliced fruit is fruit cut into uniform pieces of a defined thickness, then frozen IQF or dried, and is used in bakery toppings, snack products, infusions and decorative applications where a consistent cut profile is required.

In trade practice

Slicing lines are set to a target thickness and checked regularly with callipers or automated vision systems; drift in blade calibration is a common cause of out-of-tolerance product. Specifications state whether slices are skin-on or peeled, and QA teams measure the share of broken or irregular pieces at intake. For dried slices, water activity is tested to confirm shelf stability. Buyers should confirm whether end-to-end or cross-section slicing is required, as this affects appearance in the finished product.

In a specification

A sliced fruit specification states target slice thickness and tolerance, skin-on or peeled requirement, maximum percentage of broken or irregular pieces, and, for dried product, water activity and permitted additives.
